Nor’easter Cocktail

adapted from Maysville and Char No. 4
1 oz maple syrup
1 oz lime juice, or more to taste
4 oz bourbon
2 oz (approximately), cold ginger beer
lime slice
Combine syrup, lime juice and bourbon in a small pitcher or cocktail shaker. If possible, chill in the refrigerator or freezer until very cold
Pour over ice in a rocks glass and top with ginger beer. You may need to add more lime juice. Garnish with a lime slice
